Michelin-starred Soseki, or cornerstone in Japanese is an intimate 10 seat multi-course dining experience featuring a modern take on omakase. It’s a “chef’s choice” dinner exploring our local Florida terra through our partnerships with farmers, fishermen, cheese and ceramic artisans. In addition, our beverage director and service team has curated a global sake and wine program to accentuate the dishes but also challenge the traditional concept of beverage pairings.

Chef Michael Collantes
Michael has over 20 years in the hospitality industry starting in his home town of Winter Park Fl. As a young cook looking to work for some of the best chefs from Wolfgang Puck, Joel Robuchon, Eric Ripert, Masa Takayama and Jennifer Carroll. Michael has worked in leadership roles for amazing brands like Levy Restaruants, MGM Grand, Ritz Carlton and Culinary Director for a multi unit/ concept brand The Bento Group.
Michael works with creative consulting on projects and open to new opportunities to grow other concepts and collaborations
